Position : Blockman (Butcher) - Sossusvlei

Sossusvlei Lodge in the Namib Desert is looking for an experienced Blockman (Butcher) to join our team.
Job Responsibilities:

  • Cutting, trimming, and packaging meat
  • Preparing meat for consumption
  • Ensuring meat is fresh and well packed
  • Maintaining a high level of cleanliness and hygiene
  • Assisting Kitchen with Meat orders
  • Receiving, inspecting, and storing meat
  • Recording quantity of meat received and issued
  • Preparing specialised cuts of processed meat ordered by Kitchen
  • Maintaining inventories
  • Estimating requirements and ordering meat and sundry supplies
  • Production of Processed Meat products, e.g., Salami, Jagdwurst, Ham, Biltong, Droëwors
  • Evisceration and Primal Butchery of whole Carcasses
